Starch granule counts from Ipomoea and Solanum tubers, differentiated by grinding procedures, environment, and days within environment.
Description: | These four tables represent counts of starch granules from ipomoea and solanum tubers under both oxic and anoxic conditions. This data results from an experiment to assess damage to granules under different grinding procedures using a mortar and pestle (the gentle procedure involved grinding the starches with only the weight of the mortar and pestle, the rougher procedure included added force and moderate pounding of the starches), along with subsequent microbial consumption. The processed granules were examined under a microscope and for damage and counted. Results of grinding procedures appeared to differ based on the size of the granules. The experiment was conducted at the University of Calgary in collaboration between Dr. Julio Mercader Florin's Tropical Archaeology Lab and Dr. Peter Dunfield's Microbial Lab. |
